Chicken Artichoke Casserole

This recipe came from trying to use up what was in my pantry and kitchen. For an alternative, the chicken mixture would also be good in a pie crust for a fancier pot pie.

Chicken Artichoke Casserole

3 boneless skinless chicken breasts
1 can cream of potato soup
1 jar of artichokes
3 stalks of celery
4-5 red potatoes
1 cup of milk
2 cloves of garlic
1 tsp Herbs de Provence
1 white onion
salt to taste

Place all of above in crock pot and cook on low for 8 hours.

Mix together:
2 cups of dried stuffing, crushed
1/2 stick of unsalted butter

Transfer mixture from crock pot into a 8x8 casserole dish, cut up the chicken into bite sized pieces and top with stuffing and butter. Bake @ 350 for about 25 minutes or until topping is golden brown.

I won't say this is totally kid friendly, but it is pretty flavorful.

UPDATE: AJ said it was delicious. And that is a direct quote. Of course he may have come to the realization he has been driving me batty all day today, and was just trying to earn back some points. (That boy is going to make someone a great husband someday. )
